Win 2k8 R2 x64 file shares stop responding

ok fellow admins.... 1 throwing me loop.

original environment:

dell poweredge 2950 windows server 2008 enterprise, 16gb ram, 2 quad core processors. average utilization on cpu ~10%, average network utilization ~1%, average memory utilization ~15%. server used fileserver/sql server - runs great , has no issues.

new environment:

vmware esx enterprise vm, windows server 2008 r2 standard, 8gb ram, 4 cores, average utilization on cpu ~25%, average network utilization ~2.5%, average memory utilization ~50%. server used fileserver/sql server.

so here issue. have 2 appliaction servers that vm's, windows server 2008 r2 standard access simple file share domain account via unc. when application servers pointed physical non r2 box worked great. last night moved share new vm , when we entered production volume morning (about 2000 open files @ given time) see network utilization run normal while (about 10-25% util on gig nic) go less 40kb (never saw on physical box). fileshare unavailable during these times of issue both across network (local lan) , local on box accessing unc path. network adapter come 'normal' utilization go normal file i/o operations fail when happens.

we not , have not had symantec installed on box. tried doubling send , recieve buffers, disabling tcp offloading , large tcp offset. nothing made difference. noticed if shut 1 of front end servers down work fine seems smb , load though whatever affects file shares, nothing more.

any appreciated.

thanks!
